Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and prepare a large pot over medium-high heat.
  2. In the pot, melt butter and olive oil together. Season the beef with salt and pepper and sear it for 6-8 minutes.
  3. Add chopped onion and carrots, cooking for an additional 4-5 minutes until onions are translucent.
  4. Sprinkle flour over the mixture, stirring continuously for 1-2 minutes to thicken.
  5. Pour in apple cider and beef broth, bringing to a boil for about 2 minutes.
  6. Transfer the pot to the oven, cover it, and cook for 1 to 1.5 hours.
  7. While cooking, peel and chop potatoes and boil them in salted water for 15-20 minutes until fork-tender.
  8. Drain the potatoes, then add milk, sour cream, and cheddar cheese, mashing until smooth.
