  • 1 Avocado ripe but firm, diced
  • 100 g Feta Cheese or crumbled tofu for vegan option
  • 1 Red Onion sliced thin
  • 1 bunch Fresh Parsley chopped
  • 1 bunch Fresh Mint chopped
For the Dressing
  • 3 tablespoons Olive Oil extra virgin
  • 2 tablespoons Fresh Lemon Juice preferably freshly squeezed
  • 1 clove Garlic minced
  • 1 teaspoon Dried Oregano
  • to taste Salt
  • to taste Pepper

Method
 

Preparation Steps
  1. Rinse and drain the chickpeas.
