  • 1 Avocado ripe but firm
  • 1 cup Feta Cheese crumbled or substitute with tofu for vegan
  • 1/4 medium Red Onion thinly sliced
  • 1/4 cup Fresh Parsley chopped
  • 1/4 cup Fresh Mint chopped
For the Dressing
  • 3 tablespoons Olive Oil extra virgin recommended
  • 1 tablespoon Lemon Juice freshly squeezed
  • 1 clove Garlic minced
  • 1 teaspoon Dried Oregano or use fresh
  • to taste Salt & Pepper adjust according to palate

Method
 

Step-by-Step Instructions
  1. Rinse and drain chickpeas. Slice avocado in half, scoop flesh into a bowl, and toss with lemon juice.
  2. In a large bowl, combine chickpeas, avocado, feta, red onion, parsley, and mint. Gently fold together.
  3. In a small bowl, whisk olive oil, lemon juice, garlic, oregano, salt, and pepper until combined.
  4. Pour dressing over the salad and gently mix to coat all ingredients without mashing the avocado.
  5. Serve immediately or let chill for 10 minutes. Garnish with extra herbs if desired.
