Ingredients

For the Cream Mixture
  • 8 oz Mascarpone Cheese Provides a rich, creamy base; substitute with cream cheese for a tangier flavor.
  • 1 cup Heavy Cream Adds lightness and fluffiness to the mascarpone mixture.
  • 1/2 cup Amaretto Liqueur Infuses a nutty, sweet flavor; for a non-alcoholic version, use almond extract mixed with water.
  • 1/2 cup Cherry Juice Enhances flavor and adds a fruity punch; use fresh juice for best results.
  • 1/4 cup Granulated Sugar Sweetens the mixture and balances tartness; reduce slightly if using sweeter ingredients.
  • 1/2 cup Cherry Preserves Contributes additional cherry flavor and sweetness.
  • 1 tsp Vanilla Extract Adds aromatic depth; optional but recommended for flavor enhancement.
For the Cherry Layer
  • 2 cups Fresh Cherries Adds sweetness and texture; frozen cherries can be substituted if thawed properly.
  • 24 count Ladyfingers Forms the structure of the tiramisu; quickly soak to prevent sogginess.
For the Topping
  • 2 tbsp Cocoa Powder Dusts the top for a classic tiramisu finish.
  • 1/4 cup Dark Chocolate (shaved or grated) Provides a decorative touch and adds depth of flavor.

Equipment

  • electric mixer
  • Mixing bowls
  • 9x13 inch dish

Method

Step‑by‑Step Instructions
  1. In a large mixing bowl, combine the mascarpone cheese and heavy cream. Using an electric mixer, beat on medium speed for about 2-3 minutes, until the mixture is smooth and fluffy, resembling soft peaks.
  2. Gently fold in the amaretto liqueur, cherry juice, and vanilla extract into the mascarpone mixture. Continue mixing for another 1-2 minutes until all the flavors meld together beautifully.
  3. In a separate bowl, mix the granulated sugar and cherry preserves until smooth and well-blended. Gradually incorporate this cherry mixture into the mascarpone cream, blending for about 1 minute.
  4. Chop the fresh cherries into small pieces and gently fold them into the mascarpone mixture.
  5. Prepare a shallow dish by mixing equal parts of amaretto liqueur and cherry juice.
  6. Dip each ladyfinger briefly into the soaking liquid, just a second or two to prevent sogginess. Arrange them tightly in a 9x13 inch dish in a single layer.
  7. Spread half of the mascarpone mixture over the soaked ladyfingers, smoothing it out evenly with a spatula.
  8. Repeat the process with another layer of soaked ladyfingers and top with the remaining mascarpone cream.
  9. Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
  10. Before serving, dust the top with a generous layer of cocoa powder and sprinkle shaved dark chocolate for an elegant finish.
