Step-By-Step Instructions
  1. Begin by heating 2 tablespoons of olive oil in a large skillet over medium heat. Once the oil glistens, add 1 pound of ground beef. Cook for about 5–7 minutes, breaking it into smaller pieces until it’s well browned and crumbly.
  2. Stir in one chopped onion and 2 minced garlic cloves into the skillet, sautéing for 3–4 minutes until the onion becomes translucent.
  3. Add 4 cups of diced potatoes, seasoning with salt, black pepper, 1 teaspoon of paprika, and 1 teaspoon of dried oregano, mixing everything thoroughly. Continue cooking for an additional 2–3 minutes.
  4. Pour in 1 cup of beef broth, combine well, cover, and reduce heat to low, simmering for about 20–25 minutes until the potatoes are tender.
  5. Remove the lid and sprinkle 1-2 cups of shredded cheddar cheese evenly over the top. Cover and cook on low heat for another 2–3 minutes until melted.
  6. Sprinkle fresh parsley over the melted cheese and serve hot directly from the skillet.
