  • 1 pound Ground Beef or ground turkey/plant-based meat
  • 1 Onion freshly chopped
  • 2 Garlic cloves minced
  • 1 can Enchilada Sauce or salsa
  • 1 can Diced Tomatoes or fresh tomatoes
  • 1 can Black Beans or pinto/kidney beans
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Chili Powder
For the Base
  • 8 Corn Tortillas or flour tortillas
  • 2 cups Cheddar & Monterey Jack Cheese shredded
For the Garnish
  • 1 Cilantro optional

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. In a skillet over medium heat, combine ground beef, diced onion, and minced garlic. Cook until browned and onion is translucent.
  3. Stir in enchilada sauce, diced tomatoes, black beans, ground cumin, and chili powder. Simmer for 5 minutes.
  4. Place 4 corn tortillas in the bottom of the greased baking dish, overlapping if necessary.
  5. Spread half of the beef mixture over the tortillas, then sprinkle half of the cheese on top.
  6. Add another 4 corn tortillas on top, followed by the remaining beef mixture.
  7. Top with the remaining cheese to create a golden crust.
  8. Bake for 25 minutes, until the cheese is bubbly and golden brown.
  9. Let it rest for 5-10 minutes before slicing and serving.
  10. Garnish with fresh cilantro before serving.
