  • 2 tablespoons Cilantro Fresh, can substitute with parsley
  • 1/2 teaspoon Garlic Powder Fresh minced garlic can be used
  • to taste Salt
  • to taste Pepper
For Garnishing
  • 1 tablespoon Additional Red Onion Finely chopped
  • 1 tablespoon Extra Cilantro For garnish

Method
 

Step-by-Step Instructions
  1. Boil 6 fresh eggs in a pot of gently simmering water for 9-12 minutes. Transfer to an ice-water bath for 5 minutes to cool.
  2. Peel the cooled eggs and slice them in half lengthwise. Scoop out the yolks into a mixing bowl.
  3. In the bowl with yolks, add 1 ripe avocado, juice of half a lime, red onion, cilantro, garlic powder, salt, and pepper. Mash until smooth.
  4. Spoon or pipe the avocado mixture into the egg whites.
  5. Garnish with additional finely chopped red onion and cilantro. Serve immediately.
