- Boil 6 fresh eggs in a pot of gently simmering water for 9-12 minutes. Transfer to an ice-water bath for 5 minutes to cool.
- Peel the cooled eggs and slice them in half lengthwise. Scoop out the yolks into a mixing bowl.
- In the bowl with yolks, add 1 ripe avocado, juice of half a lime, red onion, cilantro, garlic powder, salt, and pepper. Mash until smooth.
- Spoon or pipe the avocado mixture into the egg whites.
- Garnish with additional finely chopped red onion and cilantro. Serve immediately.
