Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Core and slice the Gala and Honeycrisp apples into thin wedges and toss with maple syrup, cinnamon, nutmeg, and allspice.
  3. Spread the seasoned apples on one side of the baking sheet and scatter pecans and walnuts on the other. Bake for 15-20 minutes.
  4. Prepare the dressing by combining all dressing ingredients in a jar, sealing, and shaking until smooth. Refrigerate.
  5. Assemble the salad by mixing kale, red onion, roasted apples, nuts, dried cranberries, and pumpkin seeds in a large bowl.
  6. Drizzle the dressing over the salad, toss gently, and serve immediately.
