- Preheat your oven to 375°F (190°C).
- Carefully slice the tops off each orange bell pepper and remove the seeds and membranes. Carve fun pumpkin faces on one side of each pepper.
- In a large skillet, heat olive oil over medium-high heat. Add ground beef or turkey and brown for 5-7 minutes. Drain excess fat.
- Add chopped onion to the meat mixture and sauté for 5 minutes until translucent. Add minced garlic and cook for another minute.
- Stir in diced tomatoes, cooked rice, oregano, salt, and black pepper. Simmer for roughly 5 minutes.
- Remove from heat and mix in half of the shredded cheddar cheese until melted.
- Fill each carved pepper with the meat and cheese mixture, pressing down to fit. Place in a baking dish and cover with aluminum foil.
- Bake covered for 30 minutes. Remove foil, sprinkle remaining cheese on top and bake for an additional 10-15 minutes.
- Allow to cool for a few minutes before serving.
