  • 1 can Diced Tomatoes (undrained) Keeping them undrained ensures flavor.
  • 1 cup Cooked Rice Consider quinoa for a gluten-free option.
  • 1 teaspoon Dried Oregano Italian seasoning can be a substitute.
  • to taste teaspoon Salt and Black Pepper Season to your taste.
  • 1 cup Shredded Cheddar Cheese Mix with Monterey Jack for variety.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Carefully slice the tops off each orange bell pepper and remove the seeds and membranes. Carve fun pumpkin faces on one side of each pepper.
  3. In a large skillet, heat olive oil over medium-high heat. Add ground beef or turkey and brown for 5-7 minutes. Drain excess fat.
  4. Add chopped onion to the meat mixture and sauté for 5 minutes until translucent. Add minced garlic and cook for another minute.
  5. Stir in diced tomatoes, cooked rice, oregano, salt, and black pepper. Simmer for roughly 5 minutes.
  6. Remove from heat and mix in half of the shredded cheddar cheese until melted.
  7. Fill each carved pepper with the meat and cheese mixture, pressing down to fit. Place in a baking dish and cover with aluminum foil.
  8. Bake covered for 30 minutes. Remove foil, sprinkle remaining cheese on top and bake for an additional 10-15 minutes.
  9. Allow to cool for a few minutes before serving.
