Preparation and Cooking
- Preheat the oven to 350°F (175°C).
- In a large skillet, cook the lean ground beef over medium heat for 7-10 minutes until browned.
- Remove from heat and stir in the chunky salsa until mixed well.
- Lay out the tortillas and spoon the beef mixture onto each, rolling them tightly.
- Place rolled tortillas seam-side down in a greased baking dish and pour red enchilada sauce over them.
- Sprinkle shredded cheese on top and cover the dish with foil.
- Bake in the preheated oven for 25-30 minutes, then remove foil and bake for an additional 5-10 minutes until cheese is bubbly.
- Let cool for a few minutes and serve with desired condiments.

Store leftovers in an airtight container in the fridge for up to 3 days. For freezing, assemble but do not bake, wrap tightly, and store for up to 3 months. Thaw in the fridge before baking.
